Slow Food is working to save the diversity of artisanal cheeses, which could easily disappear under the pressure of industry, market, and restrictive food safety regulations that are ill suited to the needs of small-scale producers. The Slow Cheese network was founded in order to activate thousands of activists- to propose legislative changes, to support producers facing difficulties in different countries, to share experiences and knowledge.
