The Presidia sustain quality production at risk of extinction, protect unique regions and ecosystems, recover traditional processing methods, safeguard native breeds and local plant varieties. Today, more than 500 Presidia involve more than 13,000 producers.

The Presidia focuses on traditional products – a small group of producers produce a traditional version of the same product following a production protocol. In some countries, such as Italy and Switzerland, these projects are more successful, because consumers are interested in products that have a story behind them and that are quite particular, and this reflects an open food culture.
